Patent for the invention entitled "Method of reducing oxalic acid content in rhubarb leaf petioles"
We are pleased to announce that on Jan 13, the Patent Office of the Republic of Poland published the granted patent for the invention entitled "Method of reducing the content of oxalic acid in rhubarb leaf petioles", authored by: Miłosz Zardzewiały, PhD, Eng, prof. Natalia Matłok, and prof. Maciej Balawejder from the Faculty of Technology and Life Sciences of the University of Rzeszów.
The method developed as part of the invention is a breakthrough in the area of processing and use of rhubarb, making it more friendly to the health of consumers. The patented method allows for a unique way to reduce the content of oxalic acid - a compound, the excess of which in the diet can be harmful to health. The invention assumes the use of the ozonation process of the rhubarb plant before harvesting the leaf petioles. The proposed factors affect the biosynthesis of selected metabolic compounds of the raw material, including limiting the biosynthesis of oxalic acid.
